Signature drinks are a wonderful way to share you personal favorites with guests, coordinate with a color scheme, and even control bar costs. Sweet and elegant, this drink will make an impression on your guests.  It’s perfect for a vow renewal with gold in the color scheme.  This recipe can also gives a lesser quality champagne a more sweet and lovely flavor.

Serves 48 Guests

Ginger Simple Syrup (Make Ahead of Time)

3 cups honey
6 cups water
12 ounces sliced fresh ginger

Combine honey and water in a sauce pan over medium-high heat, stirring until simmering and well combined. Remove the pan from the heat and stir in the fresh ginger slices. Cover pan and let steep for one hour. Strain syrup into storage container and discard ginger slices.  Refrigerate for up to two months.  This recipe can be divided or multiplied to meet your needs.

Honey Ginger Champagne

Ginger Simple Syrup (2 tablespoons per glass)
8 tablespoons crystallized ginger (1/2 teaspoon per glass)
8 bottles (750 milliliters) Champagne – White or Pink

Divide crystallized ginger among 48 glasses. Add gingered simple syrup to each glass.  Pour Champagne into glasses. Serve.

Note: The first two steps can be done ahead of time and then the Champagne added just before serving.
