Big beautiful cakes are prone to issues. The good news is that a little planning and some precautions can keep it looking perfect for your special day.

  1. Cakes don’t tolerate heat, particularly those made with buttercream icing or decorated with fresh flowers.  Ideally, your cakes should be kept indoors or at least in the shade.  If your cake will need to be outside for very long, place it in a refrigerator overnight or in the freezer for a couple of hours, if possible. (Just make sure it doesn’t freeze!) Opt for a jelly-type filling, rather than a thicker cream filling if it will need to be in the heat.  Fresh flowers should be put on at the last possible minute to limit wilting before photos can be taken.
  2. Cakes don’t tolerate the wind, particularly those with fresh flowers or larger sugar or icing flowers.  Make sure your cake is placed in an area with good windbreaks to prevent flowers from being displaced or layers from tipping.
  3. Cakes with tiers must be on a level surface to prevent tipping or sliding.  Get your level and shim the table legs if necessary to make them level.
  4. The taller the cake, the more likely it is to tip or collapse. Limit the use of pillars between the layers and don’t stack any more layers on each other than you really need. Better yet, place layers on individual pedestals.
  5. Minimize the amount of time that the cake sits before serving by having it delivered as close as possible to the start time of the reception.

By taking your location and weather into consideration when selecting your cake, you will be able to enjoy your wonderful cake without unfortunate issues to put a damper on your special day.
